Roasted White Cabbage

A totally yummy side dish or a good meat free meal in itself. Really simple to make, and moreish.

Ingredients:

1tbsp. Olive oil
White cabbage sliced into wedges
1/2 lemon cut into wedges
Olive oil
Fresh thyme leaves
1 tsp. Sea salt

Lay the cabbage in an oven tray and sprinkle with salt, then pour over the oil and rub so all sides are covered. Sprinkle in a few sprigs of thyme and lay in the lemon wedges. Cook in the oven set at around 200 degrees for 25 minutes, or until the cabbage is crispy at the edges. I turned mine over halfway, be careful as they fall apart easily.
