Sticky BBQ Ribs

This is the most tastiest stickiest BBQ treat for Summer, my Aunt always made these for family BBQ’s and she has passed on her recipe. Seriously you will eat and eat these until you pop; as they are just too good!!

Ingredients

Ingredients:

This is just an approximation of what to use as you may need more sweet/spice etc according to taste. Once you have mixed all of these ingredients together taste it then add what you think it needs more of. These are what we used:

2 Large Racks Of Pork Ribs

Marinade:

3″ Chunk Grated Ginger

5 Cloves Garlic Grated

1 Red Chilli Chopped

4 1/2 Tbsp Brown Sugar

1 Tsp Ground Cumin

1 Tsp Mustard (I used Dijon but any will do)

2 1/2 Tbsp Worcester Sauce

3 Tbsp Light Soy Sauce

2 Tbsp Sweet Chilli Sauce

2 Tbsp Tomato Ketchup

6 Tbsp Honey

Method:

In a deep oven tray mix all of your marinade ingredients and stir until well combined. Taste and add to your own taste. I like it spicy and sweet.

Now add in your ribs and coat well…

Let this marinade for a few hours or overnight. You can cook this straight away if you have not got the time, but it is best to let it take in the flavours.

Heat your oven to the highest temperature.

Cover the tray with foil and place in the hot oven for 20 minutes. Then turn the heat down to 170-180 degrees and cook until the meat is tender. This could take up to a hour depending on your oven and the size of your ribs so do this in advance if you have people over for a BBQ.

Once the meat is tender remove the ribs and place on a hot BBQ to crisp up!

With the remaining juices in the pan place this over a hob on high and let it reduce and thicken.

Once you have a good colour on the ribs remove them from the BBQ; the ribs are already cooked you are just getting the crispiness from the BBQ. Place on your serving plate then drizzle over the sticky juices.

Serve up with lots of napkins 😉

The colour should be a rich red and the sauce sticky, the meat should fall off the bone and melt in your mouth!
