Tuna balls in a zingy tomato sauce

These are not meatballs they are Tuna balls…something a little different.
A simple zingy tomato sauce, with tuna style ‘fish’ balls!!

Ingredients:

Serves 2
Balls
200g tuna in oil (reserve the oil)
1/2 lemon zest
1/2 cup parsley, chopped
1 cup breadcrumbs (homemade)
2 tsp red pesto
1/2 tsp chilli powder
Salt and pepper
1 egg, whisked

Sauce
1/2 onion sliced
2 cloves garlic, crushed
1 tbsp. Red pesto
1 tbsp. Tomato puree
1/2 tsp. Chilli powder/flakes
1/2 lemon, juice
1 tsp. Soft brown sugar
1 tin chopped tomatoes (400g)

Method:

To make the balls, blend the bread with parsley to make the crumbs, then mix with flaked tuna, zest, pesto, chilli, egg and seasoning.

With wet hands make large balls.

Heat the oil from the tuna can, gently brown each side of the balls, then remove with a slotted spoon and place on a tray & pop into the oven at 200 degrees.

Add the onions to the pan and sauté until soft, add the garlic, pesto, puree, chilli and stir. Squeeze in the lemon and add the tomatoes. Add the sugar and season well.

Taste for flavour. Carefully place the balls into the sauce, stir gently so they do not break, serve with spaghetti, and extra virgin olive oil.
