As a kid my mum use to make me ‘Rumble Tumble’ which I will blog at some point.  It is a fry up but all mixed in together with scrambled eggs; great for a hangover.

This week I just used what we had in the fridge…tomatoes, spinach, a slice of ham and half a red onion.  It was very tasty and much healthier than the original Rumble Tumble!!


2 eggs whisked in a bowl

Handful mixed baby tomatoes halved (can use cherry, baby plum or regular tomatoes chopped up)

Half a Red Onion sliced

1/2 Red Pepper sliced

1 slice Ham sliced

Salt & Pepper


Pour a little olive oil in a frying pan and soften your onions and peppers.

Then add in the ham.

Then add the tomatoes.

Then your spinach, stirring as you go.

Next, pour in the eggs.

Scramble it all together, season with salt and pepper and serve.
