Chicken & Turkey Ragu
This Ragu uses lean mince meat, it is light and tasty, and super quick to cook.
- Serves 4
- 1 tbsp olive oil
- 500g chicken/turkey mince mix, you can also just use one or the other
- 1 onion, diced
- 1 carrot, grated and chopped
- 2 large cloves of garlic, grated or crushed
- sea salt
- cracked black pepper
- 1 tbsp. paprika
- 1/2 tsp smoked paprika
- 1 tbsp dried oregano
- 2 tbsp. red pesto
- 1 tbsp. tomato puree
- 1/3 cup red wine vinegar
- 400ml tin chopped tomatoes
- 1 tbsp. Worcester sauce
- 10g basil leaves, roughly chopped
- 1 tbsp. soft brown sugar
- 200g spaghetti, cooked
- Heat the oil and sauté the onions and carrots until soft but not brown.
- Add the garlic and stir.
- Season well.
- Add the paprika’s and the oregano, the red pesto and the puree, mix well.
- Add the red wine vinegar cook for a minute then add the chopped tomatoes.
- Fill half the can with water and add to the pan.
- Add the Worcester sauce and the brown sugar, reduce the heat and let this simmer for 15-20 minutes.
- Mix through the cooked spaghetti and serve with an extra sprinkle of basil and a drizzle of extra virgin olive oil.
