Chicken & Turkey Ragu

This Ragu uses lean mince meat, it is light and tasty, and super quick to cook.

  • Serves 4
  • 1 tbsp olive oil
  • 500g chicken/turkey mince mix, you can also just use one or the other
  • 1 onion, diced
  • 1 carrot, grated and chopped
  • 2 large cloves of garlic, grated or crushed
  • sea salt
  • cracked black pepper
  • 1 tbsp. paprika
  • 1/2 tsp smoked paprika
  • 1 tbsp dried oregano
  • 2 tbsp. red pesto
  • 1 tbsp. tomato puree
  • 1/3 cup red wine vinegar
  • 400ml tin chopped tomatoes
  • 1 tbsp. Worcester sauce
  • 10g basil leaves, roughly chopped
  • 1 tbsp. soft brown sugar
  • 200g spaghetti, cooked
  • Heat the oil and sauté the onions and carrots until soft but not brown.
  • Add the garlic and stir.
  • Season well.
  • Add the paprika’s and the oregano, the red pesto and the puree, mix well.
  • Add the red wine vinegar cook for a minute then add the chopped tomatoes.
  • Fill half the can with water and add to the pan.
  • Add the Worcester sauce and the brown sugar, reduce the heat and let this simmer for 15-20 minutes.
  • Mix through the cooked spaghetti and serve with an extra sprinkle of basil and a drizzle of extra virgin olive oil.

Method

Add the paprika’s and the oregano, the red pesto and the puree, mix well.

Add the red wine vinegar cook for a minute then add the chopped tomatoes. Fill half the can with water and add to the pan.
