I shared a photo of my dinner the other day of the duck dish my Aunt cooked for me, I promised to share the recipe so here it is.
Whilst I was making Christmas recipes for the Blog, my Aunt Heather cooked me an amazing dinner. She had 2 very large duck breasts, and as I had just made redcurrant sauce she decided to use some of these for the Duck sauce.

2 Large Duck Breasts
Approx 300ml Chicken Stock
Redcurrant sauce see my recipe:
1 small wine glass of port
2/3 stems of fresh redcurrants
salt & pepper
Gravy granules as a thickener
Pre-heat the oven to 180 degrees.
Heat a frying pan.
Season the breast well then place skin side down into the pan, no need for any oil. Cook until well browned and crisp, turn over and cook for another 5 minutes.
Remove and place in a oven dish skin side up, spread each breast with a layer of the redcurrant sauce.
Place in the oven for another 10 minutes. The remove and rest.
Meanwhile while the duck is in the oven, take the hot frying pan an de-glaze with the stock. add the port, 1 tbsp redcurrant sauce and the fresh redcurrants, let this bubble away.
Then thicken with a small spoon of gravy granules!! Season well.
Slice the duck at an angle.
Serve with mashed potatoes and green beans.
The Duck should be pink and the sauce is seriously tasty!!! Thanks Aunt H!xxx
